TOCINO JERKY originated on the tropical island of Cebu, Philippines. It is a traditional, secret, family TOCINO recipe passed down through the generations. Malcolm and Lory brought the family jerky recipe to Brisbane, Australia and established, Mallory’s Tocino Jerky. Lory grew up learning the traditional cooking process involving hot charcoal, then to get that perfect dry texture the tocino jerky was dried on the rooftops in full view of the sun. Using modern processes and equipment, Lory and Malcolm have adapted and perfected the secret recipe. Our jerky is made of thin slices of lean raw meat, which is marinated in a mixture of salty, sour, and sweet ingredients.
This adds the moist and pleasant bite of flavor. The jerky is marinated with Asian herbs and spices for 24 hours and is air-dried, grilled, and sealed for perfection. Malcolm and Lory carry on the tradition and have been making Mallory’s Tocino commercially from locally sourced meat, in small batches, on Queensland’s Sunshine Coast since April 2014. It is a family run business located at Narangba, Brisbane. We are all about great tasting jerky products and old-fashioned service. Moist, tasty meat jerky in a variety of flavors, 97% fat-free… why Tocino Jerky, and not just jerky?… Tocino means bacon in Spanish. It is high in protein and fat free snack. (YES! No fat – because that hinders our preservation process).
